Rob makes the most incredible pizza in the world. And I've been to Italy. And I've eaten Italian pizza in Italy. I'm serious, this pizza is so good. I think it's the combination of strong, flavorful toppings and thin crispy crust that somehow work together in beautiful wonderfulness. The first time he tried this combination of ingredients I thought he was a little bit crazy and was bracing to choke my slice down, smile in tact. I'll admit it, I judged this pizza by its cover. But I was wrong and now its my turn to share Rob's secret with the blog world. To place credit where credit is due, this pizza is all Rob. He makes the crust, he makes the sauce, he places the toppings. Thank you husband!! Pye Crust
1 tbsp yeast 1 cup warm water 2 1/2 cups bread flour (bread flour makes crispier crust, but all purpose flour works fine too) 2 tbs. olive oil 1 tsp sugar 1 tsp salt Mix all ingredients together and let rise for about an hour. Roll out very thin. Pre-cook crust at 500 degrees until it starts to bubble. Remove from oven and add toppings. Continue cooking about 5 minutes until cheese melts. The toppings we regularly use (and regularly love) are pineapple, cooked hot Italian sausage with casings removed, sun-dried tomatoes, marinated chopped artichokes, blue cheese and mozzarella plus a plethora of spices. For the sauce we (every time I say we in this post I mostly mean Rob) use a combination of tomato paste and barbecue sauce. I personally think this is pizza heaven, but obviously the Pye Crust will work just fine with other combinations. On another note, Rob and I went to Canada for four days to visit his family some of whom I had not met. They are all such amazing and interesting (in a good way) people, and they felt like my family right away. We left at 6am after Rob had just worked all night. He somehow drove the majority of the way, slept maybe 2 hours max, and was chipper and fun and energetic. I was amazed by that all day; God gave me a good one. On our way to Rob's relatives we stopped at Niagara on the Lake which is a cute little down on the Canadian side of Niagara Falls. I went with my family when I was 14 and had many fond memories of the place. We saw signs and decided it was worth a detour. The town is still just as quaint and pretty as I remembered and it was really fun to be there again, this time with my husband! Once in London, Ontario we spent tons of time chatting, eating and playing outside. Oh how I love playing outside.
